PURANG APIN

Purang Apin is a traditional dish of the Mising people of Assam. It is a food made mainly from rice. This dish is prepared by wrapping bora or lahi rice in star leaves and boiling it in water. Purang Apin is prepared on various festivals like Ali Aye Ligang and other occasions.



Purang Pin is served with Pitang Oying or other meat and vegetarian dishes. This dish is similar to the packaged rice prepared by various ethnic groups in the North East.  Purang Apin Purang Apin is a special type of rice dish of the Mising people.

Purang apin is actually rice cooked tied in star leaves. It is mainly prepared by 'Ampi Ambin' ie brown rice or lahi rice. The rice is first washed and soaked in water for a while. This rice is removed from the water. Then four star tree leaves are flattened in pairs and a little rice is added to the bag. Usually, stems of palm trees or palm leaves are used to tie these packages, but thread can also be used. Now fill a deep pot with water and bring it to a boil. The packages are then boiled one by one in boiling water. After boiling for about ten minutes, the packages are rolled over. This takes 20-25 minutes to cook the whole apin. It is then removed from the water and left for a while when the water is dry and served with various meat and vegetarian dishes. Pork dishes, ground porridge, fried potatoes etc. can be served with it. Alternatively, it can be taken with milk and jaggery. Along with the auspicious rituals, Ali Aye cooked Purang Apin during Ligang To eat with it, especially in groundnuts, spinach leaves, dried fish or meat are cooked with salt. The fish should be scaly and white in colour.
